Oh...one thing I forgot to say!

Oh...I forgot, I went to my doctor, and he had not seen me since last year.  He was very pleased with my weight loss (of 74 pounds when I saw him) and as he dictated, he stated Patient has lost a large amount of weight intentionally, and I do mean intentionally on the Atkins diet, I will be very interested as to what her choleresterol is at this point!  Well I had labs done last week, and have not heard back from them as of yet.  Will post it when I find out!!!  I asked him if he thought Atkins was bad for me, and he said at this point anything that can get the weight off of you-----I am all for!!!!!  LOL

Sorry I Have Been Busy!!!

Well here it is May 24th, and I am very pleased to say even though I have been busy with work and school, I lack one pound and I will have reached an 80 pound weight loss mark!!!!  Goooooooooooo Me!  And I continue on an on!  I don't understand why someone would prefer to starve on little caloric counts when you can truly eat lavishly and never be hungry!!!!  It has been months since I have tasted potatoes, but, I did learn to make a mean faux mashed potatoes with Cauliflower, recipe is in the Low Carbing with Friends Book!  Even my husband said you can fix this anytime!!!  My bread is mock danish, and other easily fixed faux bread recipes!  I wanted spaghatti, and bought spaghetti squash, baked it while I fixed my spaghetti sauce, and you talk about something good!!!!  It was delicious.  If I keep on I think I might even convert my husband to low carbing.  So far he loves the recipes that I cook!  I talked to a friend I have not seen in several months and she had the lap band surgery, and lost 115 pounds, and says she has to eat 5-6 tiny meals a day.  I really felt sorry for her, because I do NOT starve or eat tiny meals!!!!  The pounds continue to come off and its really not hard.  I don't even think of myself on a diet, just that I can't eat the things that my body does not tolerate well.....HIGH CARBS!!!  Do yourself and your friends a favor and kindly introduce them to low carbing, they will thank you for it as their weigh falls off!!!!
I will try to take more pics of the new recipes that I try as I go along.  
Here I am 59 working, losing weight, and back in school!!!!!  Wow is that me?  I wonder sometimes, because for a while I was just settling for growing old and letting my dreams pass me by.....No more!!!!!  I am convinced now that I can do it all!!!!

Which Low Carb Dish Do I Make Next?

Had to go out of town today and could not cook. Tommorrow I plans to make a loaf of low carb bread. I do miss bread but don't have to since there are low carb bread recipes. If anyone knows of some good low carb bread machine recipes, please share it with me.

Hit my 60 pound weight loss mark today!!!

Was very tired when I got in from work yesterday, but, I was thinking as I got on the scale yesterday evening, now I know better than to weigh in the evenings cause usually my weight is up in the evenings.  To my pleasant surprise~~~~I hit my 60 pound weight loss mark yesterday!!!!  Gooooooooooo Me!!!!  Low carbing really works!!!!

Low-Carb Taco Bake!
Yesterday evening I pulled out my wonderful Low Carbing Among Friends and cooked the Low-Carb Taco Bake.  OMG it was so easy to cook.  What was funny, while I was preparing the bottom layer from the heavy cream, eggs, taco seasoning, and cheese, my husband said you really think that is going to make a good bottom for the dish?  I told him yes, just wait and see.  Well after I removed it from the oven he was in the kitchen with me wanting to dig in!!!!  So I cut him a slice and he tasted it and after two bites, he said "this is some good stuff"  You can make this again....lol like I needed permission to cook it for him!!!!  He then said you know this would also be good for breakfast, to which I quicky agreed.  This morning before I left for work, I did eat a slice and it was goooooooooood!!!!  I will definately make it again! The recipe can be found in the Low-Carbing Among Friends on page 294. And it is induction friendly at 4.0g of net carbs.  Yep...low carbing definately does not have to be drab.  I just love my Low-Carbing Among Friends Cookbook!!!!

How to do Induction Phase

I have seen several posts on the web about how to do the Atkins Induction Phase.  It can be a little bit confusing but, if your confused here is how you do it according to the Atkins Diet. It's not really hard at all, but you have to limit your carb intake to just 20 Grams of Net Carbs a day for at least 2 weeks (I chose to say on it, and I have been on it since two weeks before Thanksgiving and have lost 58 pounds so far).  And if you don't know what net carbs are, they are the only carbs that have a direct impact on your blood sugar.You just eat to satisfy your hunger with hi protein and good fats.  Yes I said fats!  You can have up to 3 cups of salad greens a day or two cups of salad and a cup of non starcy veggies.  As for me, I love to take summer Squash and slice them long ways and then spray olive oil on them with salt, pepper, and maybe some garlic.  I then sprinkle some parmesean cheese over it and throw the squash right on the grill besides my meat.  You know, I hear some people complain about Atkins/low carb diets being so costly.  You can choose cheaper meats and still stay on the diet.  You gotta eat! So why not eat good?  I love the Atkin's Diet. And remember, you must go through all the phases of the Atkins to have a higher success rate of keeping off that excess weight you lose.  Beleive me, take it from someone who lost over a hundred pounds not once, but twice, then went back to eating the way I did before Atkins!!!!  I gained it all back and then some.  Do yourself a favor and go through the phases explained in the Atkin's Book, it is after all a really good way to lose weight.   For further info you can go to the Atkins website for more info.  Good morning and hope you have a great low carb day!!!!

Low Carb Hot Cocoa Really??? Wow

One of my weakness's was I truly missed hot cocoa.  I just found this awsome recipe for hot cocoa online.
1 cup heavy cream
1 cup water
2 Tablespoons unsweetened cocoa power
1 1/2 -2 Tablespoons Splenda
2 Tablespoons Vanilla Whey Protein powder
Pinch of salt

Directions:
Over the lowest heat possible combine the cream and water.  When they are starting to get warm, add the cocoa, Splenda, protein powder, and salt; whisk until well blended.  Bring just barely to simmer and then pour into cups.
yield: 2 servings   (great to share with a friend)
Each with 10 grams of carbohydrates and 2 grams of fiber and 15 grams of protein.
That is 8 net carbs!!!

Wow...how good is that???

Low Carber For Life!!!!

Hi,
I have been low carbing and have lost 58 pounds.  I was doing good, but now I am doing even gooder....hmmmm is there such a word?  LOL

I have been doing research on every low carb site I could find and have bought several low carb recipe books, and what I found out is this:  NOOOOOOOOOOOOOOOO   low carbing definitely have to be drab nor boring!!!!

I will be continually researching and looking for more low carb sites and recipes and trying them out because although I have lost 58 pounds, I will be keeping them off this time!

In the past, I have lost 134 pounds in 6 months back in 1985 and then after gaining it back lost my weight again 1991 and after gaining it back over the years, this time I finally figured out why I keep gaining it back. Although the Atkins way of life is great, you have to follow through the phases to be successful.  I have never gone through the phases like I am supposed to do according to Atkins.  This time I feel like I finally have to roadmap to success!

Back in 2002 I met my husband who I am married in 2010.  He is a wonderful man who accepted me for me and loves me for me!  After years of wishing I could find someone who will love me for me and not make me feel like my net worth is tied to my weight, finally I found what I had been looking for, but, wait, why can’t I just get on a diet and lose weight?  I tried every diet I could, Weight Watchers, medical diets, Dr. Howards diet, oh yeah that one really worked until my medical doctor found out about and went ballistic on me and informed me that I was taking legal speed!!!!  Legal speed, what the heck was that?  He told me that it was basically just that….speed, only my diet doctor gave it to me.  

My husband was funny, one day he asked me, can you tell that those pills are affecting you any????  That was when we were in Wal-Mart…I told him no, why?  To which he informed me, all the past times we have been shopping  I literally dragged around barely making it through the store and constantly asking him to slow down so I could catch up with him, and now he was having to chase me around!!!!  Well I did get off that diet immediately!!!!  And until about two weeks before Thanksgiving 2011 I had not been diet serious.  When it hit me,  it was like a ton of bricks, either I lose weight or I am going to die young!  

Did I say young?  Hmmmmm here I am 58 and I finally realized that I am NOT old and I am worthy!!!  So I dragged out my Atkin’s book but yet I could not seem to read it, so I downloaded the Atkins Essentials and the new Atkin’s Diet Revolution and put it on CD, and my IPhone…and I listened to it every day for a couple of weeks, and it finally hit me why I never kept the weight off.  I never went through the phases like I should have and when I lost the weight; I went back to eating carbs, therefore ballooning back up to 323 pounds!!!!  

Reality check time.  Do I want to die young?  Please no jokes, I AM NOT OLD!!!!!  What I am is worthy and I want to live!!!!!!

Since two weeks before Thanksgiving,  I have been back low carbing and the weight although it is not dropping as quickly as when I was younger, it IS dropping and I am at the 58 pound weight loss mark!!!!  Goooooo Me!!!!!
Here’s where I thought it would get tricky.  I always felt low carbing was drab and a drag.  How wrong could I be?

I started looking up all the low carb sites that I could find, and what I found out is that I am not stuck with just meats, eggs, green veggies, and cheese, but instead I found out there is a whole other world of eating out there for carb intolerant individuals like me. 

Welcome to my world!!!!   It’s almost like I starting all over again, and this time I have the roadmap to get me there, and keep me there!!!!

In the coming months, I will be researching all the low carb sites and foods, along with the recipes for my new way of life, which I will be posting to my blog….
